It was late afternoon, we were sipping and savoring the last drops of a lovely Regaleali Rose', when we heard the bells. Sure enough, Salvatore's herd of sheep and goats were grazing on the small hillside right next to The Lemon Tree. And there was Salvatore, smiling and leaning against his Fiat Panda, staff in hand, sheepdogs by his side.
They were here no more than ten minutes before Salvatore and the dogs coaxed the herd down the mountain to his farmyard. The wild grasses chomped by the sheep today will become milk tomorrow morning, which will in turn become fresh ricotta on someone's table tomorrow afternoon. What a wonderful process.
